Italian Meringue alternative for LMP etc
Quantities 150ml egg white = 300ml sugar = 120 ml water ( some say 60ml )
One large egg white is approx 30ml
Sugar at 121C add to soft peak whites beat medium while adding then carry on beating till cold
(Half the sugar of French Meringue)
